Diagnosed with an auto-immune disease, Lee Holmes changed her diet resulting in better health. The author of Supercharged Food offers some healthy eating tips to Lucy Stephens

How has your health improved?
When I was first diagnosed I was on a very restricted diet, everything I seemed to eat would make me come out in hives or I couldn’t digest it properly. I began with a simple diet and consumed soups and liquids to help repair my gut. I started to omit gluten, wheat, dairy, yeast and sugar from my diet and my health dramatically improved.
As my gut and health improved, I introduced nutrient rich super foods into my diet and they helped to boost my immune system and give me the energy and vitality I needed to heal my body at cellular level. Using natural antibiotics and anti-fungals such as garlic and onion and then using probiotics to add beneficial bacteria aided my recovery.
What are the biggest challenges people face when trying to change their diet?
Time is a big factor for many people. I wanted to create recipes that are simple with not too many exotic unpronounceable ingredients and ones that are easy to make when you get home from long day at work. Finding fresh ingredients is not always easy if you live in remote areas but there’s no reason your life needs to be compromised or lived out of a packet. Money is also a factor. In my book I reveal lots of cost effective ways to eat healthily and ways to do this such as menu planning and batch cooking to eating locally and buying in season. There’s a list of foods to avoid and additives chart along with a shopping list too.
What are you top tips for eating for maximum health?
My top tips are to find the foods that work for you.
- If you have food intolerances or allergies have tests or do a food elimination diet to find out what those foods are and avoid them.
- Try to eat as naturally as possible. Keep processed foods to a minimum and eat as fresh as possible.
- Learn how to read labels; many gluten free products are loaded with artificial ingredients and sugar to compensate for the lack of gluten.
